To the uninitiated, seafood can be a scary thing to purchase and prepare. Hamburger is one thing. Raw oysters and squid are something else entirely. The folks at Kate’s Fish, in the West Side Market, are there for you. For starters, you can be confident that the fish is fresh, flown in from wherever it lived within hours. Crimson slabs of tuna, alabaster flanks of halibut, whole red snapper, sparkling mussels, pretty-in-pink Key West shrimp, fat-ass scallops — it’s all there for the taking. Soon you’ll be spotting live soft-shell crabs and super-limited halibut cheeks, highlights of the spring seafood season. If you want tips to how to prepare it — or anything sold there — just ask the crew at Kate’s. They’ll be glad to help.
