When it comes to details on his planned downtown gastropub, chef Jonathan Sawyer (Bar Cento
) is playing close to his chest. The name? He’s not saying -- other than to note it won’t be the previously bandied-about “Gastropub.” The address? Forget it. The menu? Wait and see. An opening date? This summer – maybe.
But there are some things he’s willing to share ...
Among them, that the farm-to-plate restaurant will be the first in the region to be certified green, meaning it meets standards set by the Green Restaurant Association www.dinegreen.com for environmental sustainability. And second, it’s going to feature a fine rooftop greenhouse, where Sawyer and his staff will raise herbs and veggies for the restaurant’s year ’round use, while collecting sunlight in solar panels, as Ma Nature permits.
As a result, Sawyer is looking for folks with proven greenhouse expertise, for a “mentorship or partnership” in the endeavor. According to a recent email, “Any information and direction regarding building, running, and greening a greenhouse would be much appreciated.”
