The seemingly unstoppable taco trend will make a layover in Solon this summer when Paco’s Tacos & Tequila opens up in the former Solon Applebee's location at 6140 SOM Center Road. The new concept is being unleashed by Bret Adams, whose Chef Art Pour Restaurant Group also manages five Burntwood Tavern locations – including one in Solon – and the forthcoming M Italian eatery that is expected to open this spring in Chagrin Falls.
Adams describes Paco’s as an “innovative, hip and edgy East Side dining landmark featuring Mexican Street Food.”
His description to the contrary, the planned eatery is largely a compilation of many of the most popular devices and tactics currently being used at countless new-age taco shops.
Paco’s will feature a Day of the Dead design motif, a tactic Barrio has been adhering to for years in Tremont and now Lakewood.
Paco’s taco shells and tortilla chips will be made fresh throughout the day, a trend that Bakersfield Tacos has been riding since 2012, and will unveil in Ohio City when it opens in the first half of 2015.
Tableside guacamole carts, an approach seen everywhere from Breaking Bad
to Cozumel restaurant in Lakewood, will be rolling through the dining room.
Margaritas will be built from house-infused tequilas and served in flights, something we’ve been enjoying at Momocho for years.
Fillings will include spit-fired lamb, whole roasted chicken, pulled pork shoulder, beef brisket and spicy duck, items similar to those that will be served at Bomba Tacos and Rum when it opens this year in Rocky River.
Look for Paco’s Tacos, which has no affiliation with identically named restaurants in Charlotte, Austin, LA and Brooklyn, to open this summer.
