For the past seven years Ian Herrington has been working at On the Rise
bakery in Cleveland Heights, where he has risen to the position of head baker and production manager. Come summer of 2020, he will roll all of that experience into a bake shop of his own.
“I’ve been working towards this goal for probably about a year now,” Herrington explains. “I’ve lived in the city for seven years now and I’ve wanted to bring a bakery to the west side for a long time. Adam [Gidlow, owner] at On the Rise has been very supportive.”
Leavened, as the bakery will be called, will take up residence on the ground floor of The Tappan, a four-story, 95-unit mixed-use property currently being built at Scranton Road and Auburn Avenue. The project is the latest from the team at Sustainable Communities Associates, the group also responsible for the Fairmont Creamery, Mueller Lofts and Wagner Awning Building, which sits directly across the street.
When it opens next year, Leavened will offer a full line of artisan products like naturally leavened loaves, croissants, Danishes, brioche buns and many others. Those items will be available for purchase at the retail shop, but also at bulk to wholesale accounts.
“I’m getting an oven that is big enough for me to grow into, so I can pick up wholesale business as the bakery picks up,” he says.
The bake shop will also function as a small dine-in café serving coffee and espresso drinks. Herrington says that he is considering adding some lunch items like grab-and-go sandwiches.
